Ingredients for 2 servings:

  • 300 g salsify(s) from the jar
  • 100 g mushrooms, fresh
  • 2 persimmons
  • ½ lemon(s), juice
  • 1 tbsp honey
  • 100 g decoction of the salsify, from the jar
  • Salt
  • Pepper, colored, from the mill
  • Fat, for the casserole dish
  • 60 g Gouda (pepper Gouda)

Drain the salsify in a sieve, reserving the liquid. Cut the salsify into small pieces and place in a large bowl. Clean the mushrooms, halve them, and add them sliced ​​to the salsify. Quarter the persimmons, remove the stems and seeds, and dice them finely toss them into the salsify and mushrooms. Preheat oven to 180 degrees Celsius (convection oven). Mix together a marinade of the salsify liquid, lemon juice, and honey, and season to taste with salt and pepper. Pour this marinade over the contents of the bowl and mix well. Grease a casserole dish and pour in the casserole. Finely chop the cheese and spread it over the casserole. Bake on the middle rack for about 20 minutes – cooking time may vary.
