Oyster mushroom potato gratin

Ingredients for 4 servings:

  • 1 kg potatoes
  • 750 g oyster mushrooms
  • 1 tbsp clarified butter
  • 250 ml cream
  • 2 eggs
  • 50 g Parmesan
  • 1 clove(s) garlic
  • 1 tsp thyme
  • 1 bunch of chives
  • salt and pepper

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Peel the potatoes, slice them, boil them in salted water for 10 minutes, and drain. Brush the oyster mushrooms, cut them into large pieces, and fry them in clarified butter, seasoning with salt and pepper. Mix the cream with the eggs, Parmesan cheese, crushed garlic clove, salt, pepper, thyme, and chives. Arrange the potato slices in a baking dish, top with the mushrooms, and then more potato slices. Pour the egg-cream mixture over the top and bake in the oven at 200°C for about 30 minutes until golden brown.
