Ingredients for 4 servings:
- 750 g salsify
- 1 tbsp butter
- 1 tbsp curry powder
- 200 ml cream
- Salt
- Sugar
- lemon juice
Instructions
Working time approx. 30 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 1 hour
Peel the salsify, cut diagonally into approximately 3 cm thick slices, and immediately place them in vinegar water to keep them white. Melt the butter in a saucepan. Briefly sauté the curry over low heat, stirring constantly. Add the salsify and toss in the curry butter. Season with sea salt and sugar, and stir in the cream. Cover and cook the salsify over moderate heat for 20-25 minutes. Season with lemon juice before serving. This goes well with rice and a salad, for example.
