Stuffed cheese roll with Brussels sprouts

Ingredients for 2 servings:

  • 250 g Brussels sprouts
  • 1 small onion(s)
  • 2 tbsp butter
  • Salt
  • Pepper, white
  • Nutmeg, freshly grated
  • 200 g blue cheese
  • 50 ml wine, white, dry
  • 150 g sour cream
  • 2 rolls

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Sauté the finely diced onion in 1 tbsp butter until translucent. Briefly sauté the trimmed Brussels sprouts, then add about 1/2 cup water. Season with salt, pepper, and nutmeg and simmer for 10 minutes. Reduce the remaining liquid uncovered. Melt the peeled, finely diced cheese in the wine, stir in the sour cream, season with a little salt and nutmeg, and keep the sauce warm. Cut the tops off the rolls and scoop out the insides. Dice the insides and fry in the remaining butter until crispy. Spoon the cheese sauce into the rolls. Arrange the Brussels sprouts alongside and sprinkle with the croutons.
