Black Tiger on Bed of Potatoes with Vegetable Spaghetti and Creamy Lobster Sauce

The perfect black tiger on bed of potatoes with vegetable spaghetti and creamy lobster sauce recipe with a picture and simple step-by-step instructions.

Marinade:

  • Olive oil
  • 1 Hot peppers
  • 1 Lemon zest
  • 1 Clove of garlic
  • Pepper salt

Vegetable spaghetti:

  • 200 g Carrot (large)
  • 200 g Zucchini (cucumber size)
  • 1 Red peppers
  • 1 size Clove of garlic
  • 2 tbsp Butter
  • Pepper salt

Potato bed:

  • 500 g Waxy potatoes
  • 1 l Clear broth (instant)

Lobster Cream Sauce:

  • 100 ml Cream
  • 100 ml Milk
  • 50 g Lobster paste
  • 100 ml Crustacean or fish stock
  • Red chilli flakes

Black Tiger and Marinade:

  1. Cut the shell of the Black Tiger at the upper curve up to the tail with scissors. Fold away both halves of the shell on both sides, remove them, but leave the tail on. Remove the thin, black casing from the notch on the upper curve. Rinse tiger under cold water, dry off.
  2. Peel the garlic and cut into slices. Core and roughly chop the peppers. Mix together enough olive oil, garlic, peppers, pepper and salt. Pour into a shallow bowl and place the tigers in it. They don’t have to be covered, but should be halfway in at least until all the preparations are done. If you have enough time, you are welcome to insert it the day before. Turn it every now and then.

  1. Peel the carrots. Wash the zucchini. Turn both through the spiral cutter to create the “spaghetti”. If you don’t have one, cut both vegetables into wafer-thin strips that are as long as possible. Wash the peppers, cut in half, core and cut into thin strips. Peel and roughly chop the garlic.

Potato bed:

  1. Preheat the oven to 80 °. Prepare 2 dinner plates. Peel the potatoes (then weight approx. 400 g). Use a slicer to cut into thin slices (as for fried potatoes). Pour into a saucepan with 1 liter of clear broth, bring to the boil and then simmer for another 4 minutes. Pour immediately into a sieve, rest briefly, but do not let cool down.

Lobster Cream Sauce:

  1. Mix all ingredients in a saucepan, bring to the boil. Regulate the consistency with milk or stock. It shouldn’t be too thick, but nice and creamy. Possibly season with pepper and salt. But be careful, because the lobster paste already has a lot of flavor. If you don’t have lobster paste, you can also make the sauce with processed cheese, tomato paste or to your own taste. Keep warm on minimal heat.

Completion:

  1. Everything is going very quickly now. First, sauté the peppers and garlic in a pan. Add the vegetable spaghetti and sauté, turning several times. Pepper, salt. Turn the heat down a lot. To let go.
  2. At the same time spread the cooked potato slices flat on both plates (similar to carpaccio). Pepper, salt and place in the preheated oven.
  3. Fry the slightly drained Black Tiger in another pan without any additional oil. They should have taken on color on the outside, but still be slightly glassy on the inside.

Completion:

  1. Take the plate with the potato bed out of the oven. Pour some sauce over it, leaving one edge free on the potatoes. Arrange the vegetable spaghetti evenly in the middle and place the Black Tiger all around.
