Ingredients for 2 servings:
- 6 large beefsteak tomatoes
- 200 g cream cheese, grainy with only 0.4% fat
- 2 garlic cloves
- 4 tsp pine nuts
- salt and pepper
- basil, fresh
- Parmesan, freshly grated

Cut the tops off each tomato and scoop out the flesh with a teaspoon. Finely chop the flesh and mix it with the cream cheese. Season generously with salt and pepper and freshly chopped basil. Roast the pine nuts without fat and let cool. Add them to the cream cheese along with the crushed garlic cloves and mix. Fill the tomatoes with the cheese mixture and grate Parmesan cheese over the top. Bake in a preheated oven (175°C fan/convection oven) for about 15 minutes. Serve on two plates and garnish with fresh basil leaves.
