Ingredients for 4 servings:
- 600 g minced beef
- 8 potatoes
- 2 onions
- 4 eggs
- 1 pack iglo creamed spinach
- 2 tbsp clarified butter
- salt and pepper
Instructions
Working time approx. 30 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 50 minutes
Wash, peel, and thinly slice the potatoes. Fan the slices into 12 roses and fry on both sides in clarified butter, seasoning with salt. Thinly slice the onions and roast in clarified butter. Divide the ground beef into 4 portions in a piping ring and fry on both sides in clarified butter, seasoning with salt and pepper. Fry the fried eggs in clarified butter, each in a separate piping ring. Salt the pan beforehand to prevent unsightly spots on the yolks. Heat the spinach. To serve: Place one potato rose on each plate. Place the beef patty on top. Place the second potato rose on top and top with spinach and roasted onions. Place a fried egg on top of each portion and arrange the last potato rose.
