Ingredients for 4 servings:

  • 750 g potatoes, cooked, cooled
  • 125 g bacon, diced
  • 3 eggs
  • 3 tbsp milk
  • 150 g beef, cooked, diced
  • 2 tomatoes
  • ½ onion(s), diced
  • salt and pepper
  • Parsley
  • Oil, for frying

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 30 minutes

Slice the boiled potatoes. Brown them vigorously with the bacon and beef. Add the diced onion and fry everything until golden brown. Beat the eggs with the milk. Wash and dice the tomatoes. Add the diced tomatoes to the potatoes and mix. Season everything well and pour the egg wash over them. Cover and let set over low heat. Serve garnished with parsley! Serve with hearty farmhouse bread and a salad!
