Ingredients for 1 servings:
- 1 banana(s), approx. 100 – 150 g
- 4 tbsp, heaped spelt flour type 1050
- 2 eggs
- 3 tbsp, heaped oat flakes
- 1 tsp cornstarch or baking powder
- 50 g blueberries
Instructions
Working time approx. 15 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 40 minutes
for the weaning age
Preheat the oven to 180°C fan/convection oven. Mash the banana with a fork. Combine all remaining ingredients except the blueberries and the mashed banana in a bowl and mix with a mixer for about 2 minutes. Add the blueberries to the bowl and stir with a spoon. Fill 6 muffin cups greased with a little margarine. Bake in the preheated oven on the middle rack for about 25 minutes. Note: I usually give my daughter (currently 11 months old) two muffins for an afternoon snack. I save the rest for the next few days. Approx. 106 kcal per serving.
