Blueberry quark tartlets

Ingredients for 6 servings:

  • 250 g flour (wheat flour)
  • 125 g butter
  • 50 g sugar
  • 2 eggs, including the yolk
  • 1 tbsp vanilla sugar (bourbon)
  • 2 tbsp water, cold
  • 150 g blueberries (fresh or frozen)
  • 250 g quark
  • 125 g sugar
  • 1 tbsp vanilla sugar (bourbon)
  • 1 egg(s)
  • 3 tbsp milk

Instructions

Working time approx. 30 minutes; Rest time approx. 1 day 6 hours; Total time approx. 1 day 6 hours 30 minutes

Knead flour, butter, sugar, egg yolks, vanilla sugar, and water into a dough. Chill for 30 minutes. Grease 6 tartlet cases. Roll out the dough and line the cases. Pre-bake the dough at approximately 200°C for 15 minutes. Mix the blueberries, quark, sugar, vanilla sugar, egg, and milk (you can also use cream instead of milk). Fill the pre-baked cases with blueberries. Pour the quark mixture over the blueberries. Reduce the heat to approximately 180°C and bake the tartlets for approximately 20 minutes until light golden.
