Ingredients for 2 servings:
- 700 g blueberries
- 800 g sugar
- 4 tbsp lemon juice
- 1 jar water

Pour the water into a saucepan and turn the stove down to the lowest heat (I use 3 out of 9). Now add the washed berries and sprinkle all the sugar over them. Stir gently until the sugar has absorbed the water; you don’t want the sugar to burn. Stir gently occasionally until the sugar dissolves and everything becomes liquid. Then turn the heat up to the highest heat (I use 6 out of 9). It’s best to stir with a slotted spoon, as you want as many berries as possible to remain whole. The longer you cook, the more carefully you have to stir, as the berries will continue to soften. From now on, only stir gently every now and then. After about 10 minutes, it should start to foam on the surface. Then turn the heat down to medium. If not, turn the heat up a notch until it starts to foam, let it foam for a few minutes, then turn it down. Careful! Hot sugar! Now skim off as much of the thicker foam that collects on top and around the edges with a spoon and pour into a glass or cup to drain. It can’t be skimmed off completely, but if too much remains, it will damage the consistency. Stir gently again. Now simmer on medium heat (I use 4 out of 9) for about 30 minutes. Do not stir again. If a lot of foam collects, skim off again and again. Reduce the heat to low (I use 3 out of 9), add lemon juice, stir very carefully and wait at least 10 minutes. From then on, take a little of the liquid with a spoon and spread it on a plate. When the liquid has cooled and becomes a little more viscous, about like runny honey, turn off the heat. I rinsed out 3 jam jars with boiling water and filled them. Now let it cool completely. When closed, Slatko will keep for at least 4 months. Once opened, it should keep for 2 weeks in a cool, dark place. It’s best not to refrigerate it, as it will solidify and need to be thawed before use. Zlatko is great as a sauce for pancakes or waffles, or even on ice cream or in yogurt. Or simply eat a spoonful as a quick, tasty energy boost.
