Ingredients for 1 servings:
- 60 g yeast
- 140 g sugar
- 240 ml milk, lukewarm
- 1 kg flour
- 210 g butter
- 2 egg yolks
- 1 pinch of salt
- ½ lemon(s), grated peel
- 200 g raisins
- 10 g candied lemon
- 100 g almonds, chopped
- 1 egg yolk, for brushing
- Butter, for greasing
Instructions
Working time approx. 30 minutes; Total time approx. 30 minutes
Crumble the yeast and mix with a little sugar and lukewarm milk. Sift the flour into a bowl. Make a well in the center, pour in the yeast, and mix with a little flour. Cover the starter dough and let it rise in a warm place for 15 minutes. Then cream the butter, egg yolks, and the remaining sugar until light and fluffy, then stir into the risen yeast dough. Add the remaining milk, salt, and grated lemon zest. Beat the dough well until it pulls away from the bowl. Then fold the floured raisins, finely chopped candied lemon peel, and chopped almonds into the dough. Shape the dough into a round loaf, cover, and let it rise in a warm place for about 30 minutes. Whisk the egg yolk in a cup, brush it over the bread, and cut a cross in the top with a knife. Place the loaf on a greased baking sheet and bake in a preheated oven at 200 degrees Celsius for about 50 minutes.
