Ingredients for 4 servings:

  • 100 g bacon cubes
  • 1 carrot(s)
  • 1 onion(s)
  • 1 parsnip(s)
  • 5 potatoes
  • 3 garlic cloves
  • 1 tbsp butter
  • 1 stock cube
  • 1 liter of water
  • 1 slice(s) smoked belly
  • salt and pepper
  • some marjoram
  • 4 Vienna sausages

Brown the bacon cubes in a large pot. Remove from the pan and briefly brown the finely diced carrots, parsnips, onions, and slightly larger diced potatoes. Add the thinly sliced ​​garlic lengthwise. Add the slice of bacon and the butter. After a few minutes, deglaze everything with a liter of water and the stock cube and simmer for about 15 minutes until soft. Season generously with salt, pepper, and marjoram. Add the sliced ​​Vienna sausages and the bacon cubes and let simmer for another 5-10 minutes. In Bohemia, there is a classic potato soup without meat, but with mushrooms. My grandmother didn’t always have mushrooms available, so she would occasionally make this variation.
