Bolognese vegetarian style

Ingredients for 4 servings:

  • 1 large onion(s)
  • 2 cloves garlic
  • 3 tbsp olive oil
  • 2 carrots
  • 1 piece(s) celeriac, size according to taste
  • 1 stalk(s) leek, size to taste
  • 1 can of tomatoes, chopped
  • ¼ liter red wine, strong
  • 1 dash of cream
  • 1 tbsp sugar
  • 1 bell pepper(s), red or orange
  • herbs of your choice
  • salt and pepper

Instructions

Working time approx. 40 minutes; Total time approx. 40 minutes

Finely chop the onion and garlic and sauté in olive oil. Peel the carrots and celery and chop as finely as possible. Chop the remaining vegetables (you can vary them according to taste) and sauté them. Deglaze with red wine and reduce slightly. Add the tomatoes and sugar, possibly fresh or dried herbs, and simmer for at least (!) an hour. Season to taste with salt and pepper towards the end. The vegetables should barely have any bite left. Stir in the cream at the end of the cooking time. Serve with pasta of your choice and plenty of Parmesan cheese.
