Ingredients for 6 servings:

  • 1 small pumpkin(s) / corresponding number of zucchini
  • 4 potatoes
  • 1 kg cheese (cottage cheese)
  • 500 g feta cheese, grated
  • 1 cup(s) cream
  • 3 tomatoes, chopped
  • 1 bunch mint, finely chopped
  • Flour
  • oil
  • Salt
  • pepper

Instructions

Working time approx. 40 minutes; Total time approx. 40 minutes

Thinly slice the zucchini/peeled pumpkin, along with the peeled potatoes, and place them in a bowl along with the chopped tomatoes, mint, salt and pepper, half of the cheese, a little oil, and 0.5 cups of flour. Mix everything well and place on an oiled baking sheet. Sprinkle the remaining cheese over the top and cover with flour. Smooth the mixture with the palm of your hand and pour the cream over it. Bake at high temperature for one hour, then cover with parchment paper and bake at medium temperature for another hour. Boureki is most often eaten as a main course, with bread.
