Ingredients for 6 servings:
- 2 m.-large braised cucumber(s)
- 1 large onion(s)
- 10 medium-sized potatoes, waxy
- 150 ml tomato paste
- salt and pepper

Working time approx. 20 minutes; Cooking/baking time approx. 45 minutes; Total time approx. 1 hour 5 minutes
Totally quick and easy
Peel, core, and chop the pickled cucumbers. Wash the potatoes with their skins on and cut into small pieces, and chop the onion into very small pieces. Combine everything in a pot, add the tomato paste, and season with salt and pepper to taste. Fill with water, stir, and bring to a boil. Then simmer over medium heat for 45 minutes. Of course, this stew can be easily modified: A little sour cream makes the stew creamier, and whole tomato pieces make it even fruitier. For the meat-eaters among us: You can also easily add 400g of minced meat.
