Braised cucumbers with minced meat

Ingredients for 4 servings:

  • 1 ½ kg cucumber(s)
  • 500 g tartar or minced beef
  • 1 onion(s)
  • 1 bunch of dill
  • 1 cup sour cream
  • 100 ml water
  • 2 tsp vegetable broth
  • salt and pepper
  • 1 dash of oil for frying

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 40 minutes

Peel the cucumbers, quarter them, and remove the seeds. Then cut the cucumbers into bite-sized pieces. Dice the onion. Heat a little oil in your casserole dish, fry the onion until translucent, and add the tartar sauce. When the meat is cooked through, add the cucumber pieces and fry briefly. Add the water and vegetable stock, and let the cucumbers simmer with the lid on for about 30 minutes over low heat. Meanwhile, chop the dill. When the cucumbers are cooked through, add the dill and season to taste with salt and pepper. Finally, add the sour cream to the plate, if desired.
