Braised heart ragout 'Grandmother's style'

Ingredients for 6 servings:

  • 5 pork hearts
  • 1 liter meat broth
  • 300 g gherkins
  • 100 ml cucumber juice
  • 1 onion(s)
  • 10 g flour for binding
  • 1 ½ tbsp oil
  • salt and pepper
  • 5 juniper berries
  • possibly sauce thickener, lighter

Working time approx. 15 minutes; Total time approx. 15 minutes

Pork heart, hearty and inexpensive

Rinse the pork hearts with water and pat off any remaining blood. Clean them of any impurities and cut into large cubes. Slice or strip the cucumbers. Dice the onion. Season the hearts with salt and pepper. Heat the oil in a pan and sear the hearts vigorously on all sides. Add the cucumbers and diced onion and sear briefly. Add the juniper berries. Deglaze with the cucumber water and broth and simmer for about 50 minutes over medium heat. In a pressure cooker, the cooking time is about 25-30 minutes. Cooking time may vary slightly depending on the quality of the meat and the appliances. Thicken the sauce with a light sauce thickener if desired. Serve with noodles.
