Ingredients for 4 servings:
- 1 ½ kg kale, fresh
- n. B. water
- 40 g lard
- 2 onions
- 375 ml water
- Salt and pepper, freshly ground
- 500 g smoked pork
- 20 g oat flakes
- 2 Mettenden (smokers)
Instructions
Working time approx. 20 minutes; Cooking/baking time approx. 1 hour 5 minutes; Total time approx. 1 hour 25 minutes
Clean the kale, remove any wilted leaves and thick leaf ribs, and wash thoroughly. Add it to boiling salted water and bring to a boil. Cook for 1-2 minutes. Then drain and roughly chop. Melt the lard in a saucepan. Peel and dice the onions and add them. Pour in the water, season with salt and pepper, and cook for about 30 minutes. Rinse the smoked pork loin under cold running water, pat dry, add to the kale, and cook for 15 minutes. Stir in the oats. Place the smoked pork loin on top of the kale and cook for another 15 minutes. Remove the meat and sausage and slice both. Season the kale with salt and pepper. Serve with the meat. Boiled potatoes go well as a side dish.
