Alsatian minced meat soup

Ingredients for 6 servings:

  • 500 g minced meat
  • 500 g sauerkraut, mild
  • 3 gherkins
  • 2 onions, chopped
  • 2 tbsp tomato paste
  • ½ tsp caraway seeds, whole
  • 1 pinch of salt
  • 1 tsp sugar
  • 1 ½ liters of meat broth
  • Clarified butter

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

hearty winter dish

Brown the onions in clarified butter, add the ground beef, and fry briskly until browned and crumbly. Deglaze with the meat broth. Finely chop the sauerkraut and add it to the soup along with the finely chopped gherkins. Season with tomato paste, salt, caraway seeds, and sugar. Simmer gently for about 1 hour. The soup tastes best the day after it’s made.
