Ingredients for 1 servings:
- 2 eggs
- 65 g sugar
- 175 ml juice, it doesn’t matter which
- 50 g liquid honey
- 60 g butter, soft
- ½ tsp cinnamon
- 100 g flour (wholemeal flour)
- 1 packet of vanilla sugar
- 100 g bran
- 1 tsp baking soda
- 1 tsp baking powder
- 1 pinch of salt
- powdered sugar
Instructions
Working time approx. 15 minutes; Rest time approx. 3 hours; Total time approx. 3 hours 15 minutes
Combine the juice, butter, sugar, eggs, honey, and vanilla sugar in a bowl. Combine the flour, baking powder, baking soda, cinnamon, bran, and salt in a separate bowl. Combine everything and mix well. Chill for at least 3 hours; the very runny batter will thicken slightly during this time. Preheat oven to 200°C (top/bottom heat 175°C) and fill a muffin tin two-thirds full with batter. Bake for 20 to 25 minutes. Dust with powdered sugar.
