Bratwurst and carrot soup

Ingredients for 4 servings:

  • 500 g bratwurst
  • 1 large onion(s)
  • 3 carrots
  • 1 liter vegetable broth
  • 1 cup rice
  • 1 cup crème fraîche
  • pepper
  • some sauce thickener
  • Oil for frying

Working time approx. 10 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 30 minutes

Cut the sausages into pieces. Dice the onions and carrots and set aside. Pour the oil into a wide pot and heat until hot, then fry the sausages. Next, add the onions. When they are translucent, add the carrots and fry for another 1-2 minutes. Once everything is sautéed, add about 1 liter of vegetable stock. Bring everything to a boil. After cooking for about 1-2 minutes, add 1 cup of rice. This will take about 10 minutes. After these 10 minutes, add the crème fraîche and continue cooking. Season with pepper and thicken with a sauce thickener if desired. If you like, you can use processed cheese instead of the sauce thickener.
