Brazilian salad with smoked chicken – Salpicão

Ingredients for 8 servings:

  • 1 smoked chicken (Kassel style)
  • 1 can pineapple pieces (340 g drained weight)
  • 3 apples
  • 1 cup double cream
  • 180 g mayonnaise
  • 2 tbsp mustard
  • 1 ½ tbsp Worcestershire sauce

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 40 minutes

Place the chicken in an oven preheated to 160°C (325°F) for 20 minutes. Remove the meat from the bones and chop into small pieces. Peel the apples, core them, and dice the flesh. Place the chicken in a bowl with the meat. Add the pineapple. Combine the mayonnaise, double cream, mustard, and Worcestershire sauce and add to the bowl. Mix everything gently and serve.
