Ingredients for 4 servings:
- 250 g bread rolls, stale
- 200 ml milk, warm
- 50 g onion(s), diced
- 10 g butter
- 250 g cooked ham
- 150 g cheese, e.g. Emmental
- 15 g flour
- 3 eggs
- 2 tbsp herbs, chopped (parsley and chives)
- salt and pepper
- nutmeg
Instructions
Working time approx. 30 minutes; Total time approx. 30 minutes
Cut the rolls into thin slices, pour the milk over them, and let them macerate. Fry the diced onions in butter until golden brown. Dice the ham and cheese and add them to the rolls along with the onions, flour, eggs, and herbs, mixing them in with your hands. Season the mixture with salt, pepper, and nutmeg and form dumplings with wet hands. Let the dumplings simmer in lightly salted water for 15-20 minutes. The dumplings can be served as a side dish to meat dishes or as a main course (then pour over 80g of browned butter) with a green salad.
