Bread salad with a difference

Ingredients for 4 servings:

  • 4 slices of farmhouse bread (dark or light, at least 1.5 cm thick)
  • 500 g tomatoes
  • 12 cherry tomatoes
  • 2 garlic cloves
  • 150 g blue cheese (e.g. Roquefort cheese)
  • 3 tbsp olive oil
  • salt and pepper
  • 100 g celery
  • 2 onions (red)
  • 3 tbsp olive oil
  • 2 tbsp vinegar (red wine vinegar)
  • salt and pepper

Working time approx. 20 minutes; Total time approx. 20 minutes

Brush all slices of bread with olive oil on both sides and toast under the broiler until crispy. Peel and halve the garlic cloves, then rub half a clove into each slice. Place the bread on a plate or platter. Wash, trim, and finely dice the celery. Peel and slice the onions. Mix both with olive oil and red vinegar, season with salt and pepper. Slice the tomatoes, halve the cherry tomatoes, and divide the tomatoes between the bread slices. Season with salt and pepper, and pour over the salad dressing. Crumble the cheese and sprinkle over the bread salad. If you want even more “salad” with the bread, you can use 700g of tomatoes and 200g of cherry tomatoes. The salad dressing is also sufficient for this. You can increase the amount of cheese, but it’s not necessary.
