Bread soup

Ingredients for 4 servings:

  • 300 g onion(s)
  • 50 g butter
  • 1 ¼ liters vegetable broth or meat broth of your choice, instant or even better: homemade
  • 200 g bread(s) or rolls, stale
  • 100 g Gruyère or other cheese to taste, grated
  • Pepper, black from the mill

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 40 minutes; Total time approx. 55 minutes

Bread soup from the oven

Peel the onions and slice them into thin rings. Melt the butter in a saucepan and sauté the onion rings over low heat for about 20 minutes until soft and translucent, almost browning. Cut the bread or rolls into slices and line an ovenproof dish or casserole dish. Arrange the onions on top and sprinkle with cheese. Pour in the hot stock and grind the pepper generously. Bake in a preheated oven at 180°C for about 20 minutes. Serve very hot.
