- 250 g asparagus, green
- 50 g almonds, ground
- 30 g Parmesan, grated
- 1 egg(s)
- 100 g sour cream
- 50 g yogurt
- 1 tsp pesto, green
- salt and pepper
Instructions
Working time approx. 15 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 35 minutes
Preheat oven to 170°C fan/convection oven and line a baking sheet with parchment paper. Trim the asparagus and trim any woody ends. Cut the asparagus into thirds. For the breading, mix the ground almonds with the Parmesan cheese in a shallow bowl. In another bowl, beat the egg and season with salt and pepper. First, dip the asparagus pieces in the egg mixture, then coat them in the almond-Parmesan breading until the asparagus is completely coated. Place the breaded asparagus sticks on the baking sheet and bake for 10 minutes on each side, until crispy and golden brown.
