Ingredients for 2 servings:

  • 5 eggs
  • 2 tbsp, heaped cream cheese
  • salt and pepper
  • ½ zucchini
  • 9 cherry tomatoes
  • some feta cheese
  • some chives for decoration

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 25 minutes

low carb, cheap, quick and simply delicious

Combine the eggs with the cream cheese, add salt and pepper, and mix well. Chop the zucchini, tomatoes, and feta cheese. Prepare a muffin tin by greasing it or lining it with paper baking cups and fill it with two-thirds of the egg mixture. Add the vegetables and feta cheese and cover with the remaining third of the egg mixture. Bake the muffins at 160°C (320°F) for 15-20 minutes, then garnish with chives. Other toppings include bell peppers, onions, bacon bits, mushrooms, salami, or olives.
