Börek with Feta Filling and Spinach Filling

Ingredients
 

  • 1 Filo pastry
  • 300 g flour, 3 tbsp olive oil, 50ml, water, salt

Filling 1

  • 200 g Feta
  • Garlic, parsley, pepper, chilli, thyme

Filling 2

  • 200 g Spinach leaves + some filling 1
  • Onion, 1-2 cloves of garlic, pinch of sugar, salt and pepper

Dip

  • 100 ml Sour cream
  • 4 tbsp Natural yoghurt
  • Salt, pepper, olive oil, garlic

Instructions
 

  • Filling 1: Finely crumble the feta, finely chop the parsley and mix in, season well with garlic and pepper, a little more carefully with chilli and thyme.
  • Filling 2: Roughly chop the spinach and sweat with onion and garlic until it collapses and season well to taste (frozen goods: thaw and season). Mix in some of the filling 1.
  • Roll out the filo dough very thinly and cut into pieces approx. 12 x 10 cm. Brush the edges with egg white and put a line of filling on each piece of dough. Fold it in sideways and then roll it up like a cigar.
  • Either fry the rolls in a pan in plenty of oil until golden brown on all sides or deep-fry in oil at about 160 °.
  • 5th quick dip: whisk the sour cream with the yogurt and spices.
  • There is also a colorful salad put together according to your mood.
