Brilla's bean salad with feta cheese

Ingredients for 4 servings:

  • 750 g green beans, preferably stringless
  • 1 red bell pepper(s)
  • 1 onion(s), red
  • 1 pepper, red
  • 2 garlic cloves
  • 5 tbsp olive oil
  • 1 tbsp balsamic vinegar
  • 1 cup parsley, finely chopped
  • 1 tsp salt
  • 150 g sheep’s cheese

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

a light summer salad – crunchy and slightly spicy

Trim and wash the green beans and cut them into bite-sized pieces. Add them to boiling water and cook for about 7 minutes, then rinse with cold water. Peel and finely chop the garlic, peel the onion and cut it into half rings. Deseed the chili pepper and chop very finely. Chop the parsley. Wash the bell pepper, remove the core, and cut it into very thin strips. Mix everything with vinegar, oil, and salt. Add the cooked beans and mix well. Finally, crumble the feta cheese over the top. Delicious served warm or cold.
