Broad bean soup

Ingredients for 4 servings:

  • 250 g smoked bacon
  • 1 tbsp lard
  • 1 onion(s)
  • 1 ½ liters of water (salt water)
  • 500 g broad beans
  • 500 g potatoes
  • 1 sprig(s) savory, alternatively 1/2 tsp dried
  • 20 g flour
  • 125 ml cream or milk
  • salt and pepper

Instructions

Working time approx. 30 minutes; Cooking/baking time approx. 50 minutes; Total time approx. 1 hour 20 minutes

Brown the bacon with the diced onion in lard. Deglaze with water and simmer for 30 minutes. Then add the beans and peeled, diced potatoes. Place the savory on top (remove the fresh sprig before serving; the dried savory remains in the soup). Cook for 15 minutes. Then stir in the flour mixed with cream or milk, bring to a boil, and season. Cut the bacon into large cubes or slices and serve in the soup or on its own.
