Ingredients for 4 servings:

  • 1 kg floury potatoes
  • 500 g broccoli
  • 1 onion(s)
  • 1 liter vegetable broth
  • some oil

Working time approx. 30 minutes; Cooking/baking time approx. 20 minutes; Total time approx. 50 minutes

vegan, made from only three ingredients, cheap and healthy

Peel and dice the potatoes, divide the broccoli into florets. Peel the broccoli stalk and also dice it. Finely chop the onion. Sauté the potatoes, broccoli, and onion in a little oil. Deglaze with broth and simmer for about 20 minutes. Then puree finely. Tip: It’s up to you to decide what to add to the soup. I chose sesame seeds, lightly toasted in a pan without fat. Homegrown sprouts or crispy croutons made from leftover bread are also delicious.
