Ingredients for 2 servings:
- 2 m.-sized potatoes
- 1 m.-sized onion(s)
- 350 g peas
- 350 g broth
- some oil for frying
- e.g. cream, whipped stiffly
- n. B. Bacon
Instructions
Working time approx. 10 minutes; Cooking/baking time approx. 25 minutes; Total time approx. 35 minutes
vegan or with cream and bacon
First, peel and dice the onion. Peel and dice the potatoes as well, then cut into small cubes. Heat the oil in a small saucepan and sauté the diced onion and potato for about 5 minutes. Deglaze with the stock, bring to a boil briefly, and simmer over low heat for 15 minutes (test for doneness with a knife). Add the peas and cook for another 5-6 minutes. Purée everything with a hand blender and season with salt and pepper. If desired, garnish the soup with whipped cream and rendered bacon. This will no longer be vegan. Tip: Refine this pea soup with mint and sour cream.
