Broccoli cheese soup

Ingredients for 4 servings:

  • 1 large onion(s)
  • 500 g broccoli
  • 20 g butter
  • 2 tbsp vegetable broth
  • 150 ml whipped cream
  • 125 g cheese (raclette)
  • Salt and pepper, white
  • Nutmeg, grated
  • 4 slices of bacon

Instructions

Working time approx. 30 minutes; Total time approx. 30 minutes

Peel and finely dice the onion. Wash the broccoli and divide it into florets. Peel the broccoli stalks and slice them. Heat the fat in a saucepan and sauté the onions. Add the broccoli and sauté. Deglaze with 750 ml water and bring to a boil. Dissolve the stock in the broth. Cover and simmer over low heat for 10-12 minutes. Remove the soup from the heat and puree it finely with a hand blender. Stir in the cream. Grate the cheese, reserving a little for sprinkling, and stir it into the soup. Season to taste with salt, pepper, and nutmeg. Fry the bacon in a pan without fat until crispy and crumble. Sprinkle with bacon pieces and the remaining cheese.
