Ingredients for 2 servings:
- 300 g chicken breast
- 400 g broccoli (frozen or fresh)
- 1 handful of almond flakes
- 2 cloves garlic
- some oil
- Soy sauce, dark or light, depending on your preference
- some salt and pepper
Instructions
Working time approx. 10 minutes; Cooking/baking time approx. 15 minutes; Total time approx. 25 minutes
low-carb
Cut the chicken into approximately 1 cm cubes and slice the garlic. Cook the broccoli in boiling salted water for approximately 2-5 minutes, depending on how crunchy you like it. Drain and set aside. Heat the oil and briefly fry the chicken cubes, deglaze with soy sauce, and continue stirring continuously until the sauce is evenly distributed among all the cubes (approx. 5 minutes). Remove the chicken from the pan/wok and keep warm (e.g., 50°C in the oven). Add about 2 tablespoons of oil and heat with the garlic slices. As soon as it starts to smell, immediately add the broccoli and stir; you can reduce the heat slightly. In another pan, brown the almonds without fat. When the broccoli is evenly coated with the garlic oil, add the chicken and almonds. Season to taste with salt, pepper, and perhaps another dash of soy sauce, and serve immediately.
