Broccoli cream soup

Ingredients for 2 servings:

  • 40 g butter
  • 50 g flour
  • 500 ml water
  • 200 ml milk
  • 100 ml cream
  • 1 broccoli
  • 1 vegetable stock cube
  • salt and pepper

Working time approx. 15 minutes; Cooking/baking time approx. 12 minutes; Total time approx. 27 minutes

Roughly chop the broccoli into florets and set aside. Add the butter to the pot and melt at 100°C on speed 1. Gradually add the flour to the melted butter. Deglaze with the water, milk, and cream and stir once on speed 3 until smooth. Then bring to a boil on speed 1. Season with stock, salt, and pepper. Three minutes before the end, add the broccoli florets and chop once on a higher speed. Bring to a boil again, season to taste, and serve. Tip: If the soup is too runny, simply thicken with cornstarch.
