Ingredients for 1 servings:
- 1 head of broccoli
- 3 m.-sized eggs
- salt and pepper
- n. B. herbs, e.g. wild garlic, chives, parsley, rocket
Instructions
Working time approx. 10 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 40 minutes
Low-carb
Divide the broccoli into small florets and cook in salted water until al dente. Drain and let it drain well. Then mix with the eggs, spices, and herbs (wild garlic is particularly good) and place in a baking dish lined with baking paper. Bake in the oven at 200 degrees Celsius until the egg is firm and lightly browned on top. Tip: Using only three egg whites will save even more calories and fat. One egg white contains about 30 calories. I would use one egg yolk, however, because otherwise it doesn’t taste as good. You may need to add another egg white to ensure the broccoli is completely covered. With three eggs, this fairly large portion has only about 350 calories. Made with one egg and three egg whites, it has 250. The fiber in the broccoli and the protein will keep you full for a long time. It also tastes good if you mix in a slice of lean ham cut into thin strips.
