Ingredients for 1 servings:

  • 3 eggs, size M
  • 1 cup cottage cheese, approx. 200 g
  • 1 carrot(s)
  • 1 bunch of coriander
  • ½ lemon(s), juice
  • Olive oil for frying
  • salt and pepper

Whisk the eggs with salt and pepper. Grease a pan with a little oil, add the egg mixture, and cook an omelet over low heat. Once set, flip the omelet once. Meanwhile, grate the carrot and mix it with the cottage cheese. Chop the coriander leaves and add them as well. Season the mixture with salt, pepper, and lemon juice. Spread the cottage cheese mixture over half of the finished omelet and fold the omelet shut. This dish has about 500 calories and is well-suited to the 5:2 fast. If you’re being meticulous, you should weigh the ingredients again. A slice of bread is delicious as a normal lunch.
