Broccoli Pizza

Ingredients for 4 servings:

  • 400 g flour (dark wheat flour type 1050)
  • 2 pinches of salt
  • 1 pack of fresh yeast
  • 300 ml water, lukewarm
  • 6 tbsp olive oil
  • 600 g broccoli
  • 400 g mushrooms
  • 20 g butter or margarine
  • Pepper, freshly ground
  • 300 g crème fraîche
  • 1 tsp oregano, dried
  • 200 g cheese (pizza cheese)
  • Flour for the work surface
  • Fat or margarine for the baking tray

Instructions

Working time approx. 40 minutes; Total time approx. 40 minutes

Mix the flour, salt, and yeast in a mixing bowl. Add the lukewarm water and 2 tablespoons of oil and knead with the dough hook of a hand mixer until a smooth dough forms. Cover and let rise in a warm place for about 30 minutes. In the meantime, trim and wash the broccoli and cut it into small florets. Cook in boiling salted water for about 8 minutes, then drain. Trim and wash the mushrooms, if necessary, and cut them into thick slices. Heat the fat in a pan and fry the mushrooms over medium heat for 2-3 minutes. Season with salt and pepper. Roll out the dough on a lightly floured surface. Place on a greased baking sheet. Mix in the crème fraîche and season with oregano, salt, and pepper. Spread it over the pizza base. Arrange the broccoli and mushrooms on top. Sprinkle with cheese. Drizzle with the remaining olive oil. Bake in the oven (electric oven 200°C, fan oven 175°C, gas mark 3) for 25-30 minutes. Serve cut into pieces.
