Broccoli sauce with cream and Parmesan

Ingredients for 4 servings:

  • 1 large broccoli, approx. 500g
  • 400 ml water
  • 60 g Parmesan, preferably in one piece
  • ½ cup whipped cream
  • 3 tbsp vegetable broth, instant
  • some curry powder
  • salt and pepper
  • oregano

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 25 minutes

Bring water with salt to a boil. Wash the broccoli, cut it into any size pieces, and add it to the boiling water (it’s best to use only enough water to just cover the broccoli in the pot). Boil briefly (2-4 minutes) and drain, ideally reserving the water and returning it to the pot. Bring the water back to a boil with the vegetable stock, curry, oregano, and pepper. Turn off the heat but leave the pot on top. Add the cream and the finely chopped Parmesan cheese and season with a little salt. Return the broccoli to the pot, let it stand for 5 minutes, and you’re done. Tip: Grate some cheese over the individual portions if you like. Goes well with potatoes, pasta, but also with meat or fish dishes.
