Broccoli with Sliced pork Tenderloin, Peanuts and Potatoes
The perfect broccoli with sliced pork tenderloin, peanuts and potatoes recipe with a picture and simple step-by-step instructions.
Broccoli:
- 500 g Broccoli / cleaned in florets approx. 300 g
- 1 tsp Salt
Pork fillet strips with peanuts:
- 200 g Pork tenderloin
- 1 tbsp Sunflower oil
- 1 tbsp Tomato paste
- 1 tsp Medium hot mustard
- 1 tsp Grainy mustard
- 400 ml Broth (1 cube of Italian style herb fix 10 g)
- 2 big pinches Coarse sea salt from the mill
- 2 big pinches Colorful pepper from the mill
- 6 tbsp Cooking cream
- 2 tbsp Salted and roasted peanuts
- 2 tbsp Cut coriander (TK own production)
- 0,5 tsp Sugar
- 1 powerful splash Lemon juice
- 1 tbsp Tapioca starch
Potatoes:
- 300 g Waxy potatoes (here: 6)
- 1 tsp Salt
- 1 tsp Turmeric
Serve:
- 4 Stalk Parsley for garnish
- 2 * ½ Strauchtomate zum Garnieren
Broccoli:
- Clean the broccoli / cut into small florets, boil it for about 3 minutes in salted water (1 teaspoon salt), drain through a kitchen sieve, quench with cold water and drain well.
Pork fillet strips with peanuts:
- Clean / strip the pork tenderloin, wash it, first cut into slices and then into strips. Heat sunflower oil in a wok (alternative pan) and fry the pork fillet strips vigorously / stir-fry. Add tomato paste (1 tbsp), medium-hot mustard (1 teaspoon) and grainy mustard (1 teaspoon) and fry everything briefly. Deglaze / pour in the broth (400 ml) and season with coarse sea salt from the mill (2 big pinches) and colored pepper from the mill (2 big pinches). Fold in the cream (6 tbsp) and add the peanuts (2 tbsp). Let everything simmer for 3 – 4 minutes. Mix the tapioca starch (1 tbsp) in a little cold water and thicken the pork tenderloin with peanuts. As soon as it starts to thicken, slide the wok off the stove. .
- Mix the pre-cooked broccoli florets with the pork fillet slices with peanuts, season with sugar (½ teaspoon) and lemon juice (a strong squeeze). Warm everything up briefly.
Potatoes:
- Peel and wash the potatoes and cook in salted water (1 teaspoon of salt) with turmeric (1 teaspoon) for about 20 minutes and drain.
Serve:
- Serve the broccoli with sliced pork tenderloin, peanuts and potatoes, garnished with parsley and ½ vine tomato.
