Ingredients for 4 servings:

  • 500 g runner beans
  • 250 g potatoes
  • 50 g butter
  • 1 large onion(s)
  • 3 tbsp vinegar
  • 1 tbsp flour
  • salt and pepper

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 35 minutes; Total time approx. 55 minutes

Grandma’s bean vegetables from 1900

Cut the green beans into small pieces and dice the potatoes. Cook the beans in salted water for about 15 minutes and the potatoes for 15-25 minutes. Then drain both. When draining the green beans, save the water for the sauce later. Finely chop the onion and fry in butter until golden brown. Then stir in the flour, add some of the boiled bean water, and make a roux. Season with salt, pepper, and vinegar. Add the beans and potatoes to the sauce and bring to a boil briefly.
