Brown onion soup

Ingredients for 5 servings:

  • 50 g butter
  • 750 g onion(s)
  • 2 tsp sugar
  • 2 tsp flour
  • 1 liter beef broth
  • Salt
  • pepper
  • ½ baguette(s), sliced
  • 50 g Gruyère, grated

Instructions

Working time approx. 15 minutes; Cooking/baking time approx. 50 minutes; Total time approx. 1 hour 5 minutes

Thinly slice the onions. Heat the butter in a saucepan. Add the onions and sugar. Reduce the heat and simmer the onions gently for 20 to 30 minutes, until evenly browned. Add the flour and sauté for 5 minutes. Pour in the broth, season with salt and pepper, and bring to a boil. Simmer for 15 to 20 minutes. Meanwhile, brown the baguette slices on one side in the preheated grill. Sprinkle the other side with cheese and toast until golden brown. Season the soup to taste and transfer it to a tureen. Place 1 slice of baked baguette in each bowl and ladle the soup over it.
