Brownies with cherries, walnuts and chocolate icing

Ingredients for 1 servings:

  • 225 g butter
  • 200 g dark chocolate
  • 6 eggs
  • 300 g sugar
  • 1 packet of vanilla sugar
  • 375 g flour
  • 3 tsp, leveled baking powder
  • 200 g walnut kernels, chopped
  • 1 jar sour cherries, approx. 750 ml
  • 50 g chocolate shavings
  • 200 g dark chocolate coating
  • 100 ml milk
  • 60 g butter
  • Cocoa for dusting

Working time approx. 30 minutes; Cooking/baking time approx. 30 minutes; Total time approx. 1 hour

for a 30 x 40 cm baking tray

For the batter, melt 165g butter with the chocolate in a saucepan. Allow the mixture to cool slightly. Meanwhile, put the eggs, sugar, and vanilla sugar in a mixing bowl and mix well. Then add the flour, baking powder, walnuts, and the butter-chocolate mixture and stir in. Spread the batter on a greased 30 x 40cm baking sheet and smooth it out. Drain the cherries well and spread them on one half of the batter. Sprinkle the grated chocolate over the cherries. Bake in a preheated oven at 160°C (fan-assisted) for about 30 minutes on the middle rack. When the brownies have cooled, melt the dark chocolate with the milk and the remaining butter and spread it over the side without the cherries. When everything is cool, sift the cocoa powder over the chocolate glaze.
