Brussels sprout and potato patties

Ingredients for 2 servings:

  • 1 handful of Brussels sprouts, cooked
  • 1 handful of potatoes, cooked
  • some breadcrumbs
  • some salt
  • some nutmeg
  • 1 egg(s), optional

Working time approx. 10 minutes; Cooking/baking time approx. 10 minutes; Total time approx. 20 minutes

Vegetarian leftovers

As is often the case, there are potatoes and Brussels sprouts left over from Sunday dinner. I mashed together the leftover Brussels sprouts and a few leftover potatoes. Since I always serve the Brussels sprouts with butter and breadcrumbs, that’s naturally included in the mixture. I then add breadcrumbs to bind them together. Perhaps an egg would help bind them even better; just give it a try. I then season them with a little salt and nutmeg. Now you can easily form small patties by hand and simply fry them in oil until they are the desired degree of browning. I find these patties very tasty and they’re a great way to use up leftovers.
