Quick Bundt cake

Ingredients for 3 servings:

  • 2 eggs
  • 100 ml neutral oil, e.g. sunflower oil or rapeseed oil
  • 80 g sugar
  • 1 small apple
  • 1 small carrot(s)
  • 50 g nuts, whole, of your choice
  • 50 g dark chocolate or other chocolate
  • 100 g flour
  • ½ pack of baking powder

Instructions

Working time approx. 10 minutes; Cooking/baking time approx. 35 minutes; Total time approx. 45 minutes

Grease a small Bundt cake pan or the air fryer pan. Combine the eggs, oil, sugar, roughly chopped apple and carrot, chocolate (chopped), and nuts in a food processor and mix well. Then add the flour and baking powder and stir in. Pour the batter into the pan and bake at 160°C for about 35-40 minutes. Then let the cake cool, remove it from the pan, and top with glaze or powdered sugar, if desired.
