Brussels sprout flan

Ingredients for 4 servings:

  • 400 g Brussels sprouts
  • 300 g smoked pork, raw
  • 10 g butter
  • 5 eggs
  • 6 tsp flour
  • 1 cup crème fraîche
  • pepper
  • Salt
  • nutmeg
  • 1 tsp broth, granulated

Instructions

Working time approx. 20 minutes; Total time approx. 20 minutes

Clean the Brussels sprouts, halve the florets, place them in boiling salted water, and cook for 5 minutes. Finely dice the smoked pork. Heat butter in a pan and brown the smoked pork on all sides. Drain the Brussels sprouts. Whisk the eggs with the crème fraîche, season well with pepper, salt, and nutmeg, and mix in the flour and granulated stock. Place the Brussels sprouts in a heatproof dish (casserole dish), sprinkle with pepper and nutmeg, and scatter the smoked pork cubes over the top. Pour the egg mixture over the flan and bake on the lowest rack of a preheated oven (200°C/400°F) for about 25 minutes (until the egg mixture is completely set).
