Brussels sprouts baked with feta cheese

Ingredients for 1 servings:

  • 150 g Brussels sprouts, cleaned
  • 1 tbsp rapeseed oil
  • 1 tbsp, leveled butter
  • 100 g potatoes, peeled and cut into cubes
  • 50 g onion(s), cut into strips
  • 100 g apple, peeled, pitted, cut into cubes
  • 1 clove(s) garlic, finely chopped (or a little more)
  • 1 pinch(s) thyme
  • some nutmeg, freshly grated
  • Salt and pepper, freshly ground
  • 2 tbsp cream
  • 70 g feta cheese, diced
  • 1 tbsp, heaped walnut kernels, chopped

Instructions

Working time approx. 20 minutes; Cooking/baking time approx. 35 minutes; Total time approx. 55 minutes

Pre-cook the Brussels sprouts in lightly salted water for about 5 minutes, drain well, and rinse under cold water. Heat oil in a pan, fry the potato cubes with the lid on for 10 minutes, stirring occasionally. Add butter, add the onion strips, and fry uncovered for another 5 minutes. Halve the Brussels sprouts and mix the apple pieces with the potatoes along with the garlic, nutmeg, thyme, salt, and pepper. Heat in the pan. Pour into a baking dish, add the cream, and scatter the feta cheese cubes over the Brussels sprouts. Sprinkle with chopped walnuts. Bake in a preheated oven at 200°C (top/bottom heat) for about 10 minutes.
