Ingredients for 4 servings:
- 125 g lentils, red
- 750 ml water
- 75 g bulgur
- 1 onion(s)
- 1 bell pepper(s)
- 2 tomatoes
- 1 garlic clove(s)
- 2 tbsp ajvar
- 1 tbsp tomato paste
- 1 tbsp olive oil
- 1 tbsp lemon juice
- ½ tsp harissa
- 1 tsp salt
- 1 tsp cumin
- pepper
Instructions
Working time approx. 15 minutes; Rest time approx. 1 hour; Cooking/baking time approx. 20 minutes; Total time approx. 1 hour 35 minutes
Bring the lentils to a boil in 750 ml of water and simmer over low heat for 10 minutes. Add the bulgur wheat and simmer for another 5-10 minutes. Remove from the heat and let it simmer. Finely chop the onions, peppers, and tomatoes. Crush the garlic. Place everything in a bowl. Mix the olive oil with the ajvar, tomato paste, harissa, spices, and lemon juice. Stir into the still-warm lentil mixture and let it simmer for a while. Then add the mixture to the vegetables and mix everything thoroughly. Let it simmer for 1 hour.
