Ingredients for 6 servings:

  • 200 g bulgur
  • 250 ml salt water
  • ½ cucumber(s)
  • 2 tomatoes
  • 2 spring onions
  • 3 garlic cloves
  • 2 tbsp tomato paste
  • 1 tbsp ajvar
  • 1 tbsp soy sauce
  • chili powder
  • Paprika powder
  • Salt
  • 3 tbsp vinegar
  • 4 tbsp sesame oil
  • 4 tbsp peanut oil
  • 1 tbsp parsley, flat

Working time approx. 35 minutes; Rest time approx. 2 hours; Total time approx. 2 hours 35 minutes

Fresh, simple

Boil the bulgur in salted water and let it swell for about 10 minutes. Drain the water and let the bulgur cool. Meanwhile, dice the cucumber and tomatoes. Finely slice the spring onions. Chop the garlic. Place the vegetables in a salad bowl and toss to combine. Stir in the bulgur. Mix together the tomato paste, ajvar, soy sauce, vinegar, sesame oil, and peanut oil and add to the salad. Mix well and season the salad with salt, chili, and paprika. If the salad is too dry, add more oil. Let it stand for 2 hours. Sprinkle with chopped parsley before serving.
